Peaches are a deliciously sweet treat—especially in the summertime! Make the best of in-season fruits and vegetables with our Peach and Cucumber Salad, a refreshing and good-for-you summer meal. This recipe takes only about 15 minutes to prepare and will leave you feeling full and hydrated.
This light, flavorful salad features sweet summer peaches, crisp cucumber, creamy avocado, and fresh herbs.
Much like my reader-favorite Chicken Cashew Salad and Edamame Salad, this is a fantastic option when it’s simply too hot to turn on the oven.
How To Slice Stone Fruit

First, cut the fruit in half, lengthwise, slicing all the way around the pit using the indent as a guide. Hold each half of the cut fruit and twist in opposite directions.
With ripe fruit, this action should help separate the halves easily. If not, use your hands to pull the halves apart. If you have a Cling-Free or Freestone Peach, you’ll be able to remove the pit easily. If not, use a spoon to dig it out.
Peach Cucumber Salad With Basil Vinaigrette
This recipe is a perfect mixture of textures and flavors. With soft and sweet peaches, crisp and cool cucumbers, and a sweet and tangy vinaigrette this is a perfect summer salad. We also have a lot of mint growing in our garden, so sometimes I swap in mint for the basil.
Sometimes I like to add toasted pecans and/or crumbled goat cheese to the top for added crunch or creaminess. Make sure you wait until serving to add them though. They get too soft if they’re left on top of the salad for too long.
Cucumber and Peach Salad

This is a fresh, summery salad: The cucumber is crunchy and the peach is juicy, and they look so pretty together. If you want to make something more like a salsa to scoop up with chips, just cut everything into smaller pieces. When Kids Advisory Board member Te’Lario tested this for us, he said, “It turned out great!”
Tips for Making the Best Peach Salad
- Use ripe peaches: the more ripe your peaches are, the more flavorful the salad will be. Under-ripe peaches will still work, and thankfully the lemon juice will soften them a bit, but the salad will be slightly less sweet and flavorful.
- Roll-cut the cucumber: if this knife-cut is new to you, check out the step images I’ve included in this article, or watch this video on how to roll-cut vegetables. I love this knife technique because it increases the surface area of a vegetable and makes for a gorgeous presentation.
Peach Raspberry & Cucumber Salad is refreshing fruit salad which goes perfect as evening snack. Its a great alternative to fried/junk snack items especially if you are watching your weight or even otherwise. Just like other salads, this recipe calls for mixing the main ingredients (fruits here) with the dressing which is made of mint, lemon juice, honey & roasted cumin powder.
